Sweet Potato and Apple Soup

My mom made this divine soup for Thanksgiving dinner and I just had to share it with all of you!! It is a perfect cold weather food and such a great addition to add to the generic soups. No matter if you're making it for a large group or just yourself (always good to store extra so you don't have to cook for a night!), you should definitely try out this yummy recipe!



SWEET POTATO AND APPLE SOUP

Serves 10

 1 T unsalted butter
1 large onion, peeled and diced
2 shallots,  peeled and minced
2 pounds sweet potatoes, peeled and cut in cubes
1/2 pound carrots, peeled and cut in cubes
2 tart apples (granny smith), peeled, cored, and cut in cubes
3 cups chicken stock
1 cup water


Melt butter in large stock pot.  Add onion and shallots and saute over medium high heat for 3 - 5 minutes.  Reduce heat, add the sweet potatoes, carrots and apples.  Continue to saute for 8 minutes stirring frequently.

Add the chicken stock and water.  Simmer for 30 minutes or until vegetables are soft.

Transfer the soup in batches to a blender or a food processor and puree.  Return to the a pan or stock pot to reheat.  Serve hot.  Enjoy!!!
